- 1 kg tomates maduros
- 2 dientes ajos
- 30 ml vinagre
- 1 cucharadita sal
- 200 gr miga de pan
- 150 ml aceite de oliva
- 3 huevos cocidos
- 200 gr jamón picado

- Lo primero que vamos hacer será, lavar los tomates. Ahora los troceamos a trozos y los añadimos al vaso de la Thermomix. Pelamos los ajos y los añadimos junto con la sal. Programamos 30 segundos a velocidad 5, hasta que quede triturado. Ahora añadimos la miga de pan, sin la corteza. El pan debe ser del día anterior. Incorporamos el vinagre, y programamos 30 segundos a velocidad 2,5, y 10 progresivamente.
- Estando todo bien triturado, sin ninguna piel y a nuestro gusto, vamos añadiendo el aceite de oliva por la boca del Cubilete de la Thermomix. Y volvemos a programar a velocidad 5, durante 30 segundos. Volcamos en una cacerola y lo introducimos al frigorífico para que se enfríe. Cocemos los huevos en un cazo con sal, durante 15 minutos. Una vez cocidos, los pelamos bajo el chorro de agua fría del grifo.
- Los picamos bien y reservamos. El jamón serrano, yo utilicé el que ya viene picado. Sacamos el salmorejo del frigorífico, y lo servimos en cuencos. Añadimos un chorrito de aceite de oliva en el centro, después el jamón serrano picado y por último los huevos. Servimos y listo para degustar.
