Bueno mi marido es camarero y siempre dice que a mi me quedan buenísimos pues aquí os dejo la receta a ver si la haceis y me decis algo. Siempre hago dos kilos para luego congelar. - Cuando esta frito se añade el pan tostado o frito, las almendras y las avellanas peladas, se echa el pimentón y la especies especial para callos, se echa bastante y se quitan las guindillas, se echa la sal.
- Se corta los pimientos, la cebolla y se van sofriendo en aceite de oliva, con la guindillas y la hoja de laurel, se añade los ajos y después los tomates.
- Se tritura todo y se pasa por el chino (si tenéis thermomix no hace falta pasarlo por el chino pues te lo deja muy fina la salsa).
- Por otro lado freír los taquitos de chorizo y jamón. Pasar la salsa a una cazuela (preferentemente de barro) y echar los callos, y los taquitos de chorizo y jamón.
- Seguidamente se tira agua del hervor de los callos y se cuecen hasta que reduzca la salsa probar y si hace falta se echa más especies y tener en cuenta que al día siguiente estarán más buenos.
