  2. 2 kg anguilas
  3. 100 gr. chirlas
  4. 25 dientes ajos
  5. 2 cucharadas tomate natural triturado
  6. 2 litros agua
  7. 1 rama canela
  8. 3 clavos
  9. Pimentón
  10. Azafrán
  11. Nuez Moscada
  12. 2 kg patatas
  13. 300 gr agua de patata
  14. 9 gr gluconolactato
  15. 1.8 gr. xantana
  16. 3 litros agua
  17. 15 gr alginato de sodio
  18. 500 ml aceite de girasol
  19. 6 guindillas

  1. EL AGUA DE PATATA: Se lavan y se cortan las patatas en trozos y se ponen a cocción con la piel unos 10 minutos. Transcurrido este tiempo, se deja reposar 12 horas, se cuela y se lleva al fuego hasta que reduzca a la mitad, se rectifica de sal y se reserva.
  2. EL ACEITE DE GUINDILLA: Se calientan el aceite y las guindillas a 80º C durante 2 horas. Pasado este tiempo, se reserva.
  3. PARA EL BAÑO DE ALGINATO: Se pone la mitad del agua en la thermomix y se tritura con el alginato durante 5 minutos, se cuela y se junta con el resto del agua. Se saca el aire en la máquina de vacío y se reserva.
  4. EL ESFÉRICO DE PATATA: Se tritura con el turmix el agua de patata con el gluconolactado, se cuela y se saca el aire con la máquina de vacío. A continuación se junta con la xantan, se vuelve a triturar y se elimina el aire de nuevo.
  5. Se junta con el baño de alginato, se hacen los esféricos y se pasan con la cuchara de esféricos a un baño de agua y se conservan en aceite de girasol.
  6. LA SALSA DE ALL-Y-PEBRE: Se pelan y machacan los ajos y se sofríen en el aceite de guindilla. A continuación se añaden dos cucharadas de tomate natural triturado sin semillas.
